Who has experience with these units? Looking at picking one up for aligning an old 21mhz set. Question is, do these actually require the appropriate crystal to generate a marker pip or can I just ballpark it using the control?

No, a crystal is not required. You can use the variable marker generator. A crystal is handy to calibrate it though.
