One of the most anyoing things in automobiles is that the audio system of the automobile is turned off for a few seconds when the engine is started or turn off.
In the past it was the same or it's just a more recent ideea?

In the days of tube radios you wanted the radio off when the engine was off, after all a 6V tube radio drew 10+ amps and could kill a tired battery in no time.

I don't think I've been in a car that runs the radio when cranking the engine with the starter motor...

GM cars 2002 and newer will leave the radio on after you stop the engine and remove the key until you either open the door or a something like 10 min timer runs out.

I was talking about switching off for a few second. Let's say that you stop the engine. You turn off the ingnition and the radio stops. After the engine stoped, the radio (or whatever audio is) will turn agian. On older cars it was this stupid few second stop when turning on or off the egine?

As I said on the 02 GM cars I've had you can go from a running engine to engine off key removed from the ignition and the radio won't stop for a second... you have to open the door or wait a good 10 minutes for it to turn off.

Ya... GM calls it retained accessory power :)

On many cars "accessory" loads like headlights, cabin blower, and radio get turned off when the ignition is turned to start, to give maximum cranking amps.

On my 91 Mercedes the radio keeps itself on for 3 seconds after the ignition is off... to give you time to go from RUN to OFF to Accessory without interrupting the tunes.

On my 14 Cadillac ELR, the audio system originally played a startup / shutdown sound. I turned that off first thing... quite annoying. When turning the car off it would stop the music playing, do the sound, then resume the music.

Before the accessory power was controlled by computer, the radio was on the accessory terminal of the ignition switch. So, as soon as you turned the switch to OFF, the radio stopped completely. Was that your question?

Also, in the modern cars I have driven, the radio and other accessories do stop while cranking the engine, but not even momentarily when you shut it off, until you open the door.

Then you would not turn the switch all the way to OFF. The positions on the switch were OFF, ACCessory, RUN, START. A spring would return the key from START to RUN when you released the key.

On even earlier cars (like 1930s to early 1950s, I guess - before my time) the starter motor was activated with a foot switch.

Well, "Renault" 12 a.k.a. "Dacia" 1300 (1310 was a little bit modified version) could be crankstarted, even it had ignition key. Even some early "Dacia" 1310 could be crankstarted. And we talk about post 1966 period...
