Seller says everything works but the changer needs a new needle. I would like an old monochrome TV to watch my B&W movies and shows on, a good changer to listen to and record my 78's to tape on.

What should I look out for?

The things to look for in any vintage TV are mainly common sense; that it hasn't been messed around with /missing parts, and also that several key components are still OK (Flyback transformer, picture tube, tuner, etc.) 90% of the time, old TVs just need the capacitors replaced, and a general checkover.

Basically, the Curtis Mathes is a good set (made in Texas), but like any other vintage TV, it will need the above mentioned attention before it should be used. If you're a hobbyist/handy with electronics, you will be fine for the job. Or if you have a friend who is, that's fine too. Tubes are no problem to find, and neither are the capacitors. That CM chassis is fairly simple, and service literature is available.
